Ernesto Palma : "my cuisine is born from instinct and passion¡¡.it is vivacious. It is influenced by the weather and the seasons. It¡¯s modern¡for modern people who eat less but better!!!"
Self-taught - his first experiences were in France and England. He then managed a restaurant in the Alto Salento before moving back to town and, with a partner, opened °Trattoria Pantagruele". It was here that he dedicated himself completely to his cooking, moving away from the traditional to the creative.
For some years he lived in Tuscany, running the Astakos restaurant near Pisa where he gained more knowledge of oils and wines and thanks to a stimulating clientele, further refined his art, using in particular, simple products from the land.
On returning to Brindisi, he opened Menhir and he is "taking to the sea again"... transforming the traditional into refined. He is constantly researching and selecting fine and rare local wines. "
